This is a delicious, healthy, and easy recipe to try for dinner! Prep all your ingredients and just bake in the oven and serve over rice. Mix and match whatever veggies/fruit you have! Try to chop everything around the same size for even cooking.
Ingredients:
1-2 chicken breasts, cut into bite sized pieces
1c pineapple chunks
2 diced bell peppers
1 diced onion
1/2c BBQ sauce
Lime juice
Salt/pepper
--separately, 3-4c cooked white or brown rice
*optional toppings:* sesame seeds, cilantro
Preheat oven to 350. Toss chicken, peppers, and onion in large bowl with salt/pepper and BBQ sauce to coat. Spread evenly on roasting pan lined with parchment + cooking spray or nonstick liner. Bake x20 min then remove from oven. Add pineapple chunks to pan and mix around with other ingredients then finish baking another 15-20 min so chicken is done. *Cook rice while chicken is baking!* When roasting is done, drizzle lime juice over chicken and serve on top of the rice with an extra drizzle of BBQ sauce if you like!
