There's nothing better than a bowl of hearty stew on a cold night! Well maybe some cornbread with lots of butter to go with it!
This is a simple and budget friendly way to make a large pot of stew for your family, and of course you can substitute any ingredients to make it how you like!
Ingredients:
48oz tomato juice
Leftover roast chunks OR 1lb cooked ground beef/turkey
1 large onion, diced
1/2lb baby carrots, chopped
1 bag frozen peas
4 small or 2 large potatoes, diced
2 beef bouillon cubes
Garlic powder
Salt/pepper
2 bay leaves
Saute onions and carrots in a little oil over medium high heat in a large pot. Add potatoes and saute for about 10min. Add remaining ingredients. Bring to a boil then reduce heat and simmer 45min-1.5hr, or until carrots and potatoes are tender. Salt to taste before serving.
