Autumn Roasted Garlic Parmesan Acorn Squash



If you are looking for an easy way to make a healthy snack this fall, search no further!

We recently went to the Amish market just in time for an amazing assortment of fall produce. In the haul I got an acorn squash to try and this recipe was a hit! So quick and easy to put together.

Ingredients:

1 acorn squash
Olive oil
Grated parmesan
Garlic powder
Italian seasoning
Salt

Preheat to 400° then seed and slice your squash (don't worry about the skin--it softens in the oven!). Keep the slices no more than about half an inch thick for even cooking. In a large bowl add the squash and a generous splash of oil, then season to taste with remaining ingredients. Toss to coat well then spread out in single layer on a nonstick surface or roasting pan. Bake for 30min, flipping pieces once halfway thru. When parmesan is roasted and golden they are ready!
