This blog was started in 2008 when we did IVF for the first time to build our family after 5 1/2 years of infertility. We now have 14 and 8 year old boys (thanks to modern medicine) and we are enjoying our blessed life as parents ♥ In the summer of 2016 we took another huge step and moved across the country from Oklahoma to New York! This blog is about life and everything in between

10 Months Young

At 10 months old you:

  • Still wake up 1-3x per night
  • Are mostly sleeping in your crib in your own room now
  • Still wearing cloth diapers!
  • In all size 12mo clothes
  • Have 7 teeth now!
  • Still take 2 good naps
  • Will NOT sit still! You love to crawl and stand up
  • Are eating more regular food now and finger foods
  • Have about three 6oz bottles each day
  • Like drinking water from a sippy cup

He is such a sweet boy and loves to smile! He is always on the move and I know he'll be walking soon. The one thing he loves more than moving is EATING! This boy can put that food away, I think he has a hollow leg! I just can't believe this his first birthday is only 2 months away.

Fun With Pho!

Today while the big kid was in school, we decided to take a fun trip to the local Asian market and check out the goods! Jacob loved the music they had playing and bounced in his seat the whole time.

I got some seasoning cubes to make Pho, some treats, coconut milk, spoons, fresh ginger, and some other veggies.

Hubby requested spring rolls to go with the pho so that's what I started doing while the broth was simmering. Spring rolls are pretty simple and I already had the rice paper. I cooked some chicken breast with Chinese 5 spice, and I cooked some rice noodles. You soak each rice paper in warm water for about 30 seconds the lay it on a plate. You layer your fillings then carefully wrap it up. I used lettuce, rice noodles, and the seasoned chicken. Yum!

For the pho I keep it simple by using the bouillion cube that has all of the seasoning in it. Each cube flavors 2 cups of water and I made 6 cups of broth. When it came to a boil I added noodles. When those were cooked I turned the heat off and added the cooked chicken and chopped green onions.

It was all delish and even Brad loved it! We each ate 2 spring rolls.
